Tropical Date Loaf

Ingredients:

Method:

- 1cup Nu-Vit Dates,
Chopped
- 1/2 cup boiling water
- 125g butter
- 1/2 cup castor sugar
- 1 egg
- 2/3 cup self raising flour
- 1/4 cup coconut, shredded
|
- Soak dates in the water for 15
minutes.
- Cream butter and sugar then combine
the egg.
- Stir in the flour, coconut and dates.
- Spread into a prepared loaf pan.
- Bake in a moderate oven for
approximately 40 minutes.
- Stand for 5 minutes before turning.
- Cool on a rack.

Peach & Date Slice

Ingredients:

- 1 1/2 cups self raising flour
- 1 cup brown sugar
- 425g can peach slices, drained and
chopped
- 1/2 cup Nu-Vit Dates,
finely chopped
- 1/2 cup desiccated coconut
- 1/2 cup Nu-Vit hazel nut, finely chopped
- 180g butter, melted
|
- Sift the flour into bowl.
- Add the sugar, peaches, dates,
coconut and hazel nuts.
- Mix in butter.
- Pour into a greased lamington tin.
- Bake in a moderate oven for 25
minutes.
- Allow to cool in the tin, then cut
into pieces.
- Store in an airtight container.
Makes about 24

Date & Nougat Bar

Ingredients:

Method:

- 1 1/2 cups Nu-Vit Dates,
chopped
- 1 cup flaked oats
- 1 cup sugar
- 1 cup self raising flour
- 3/4 cup coconut
- 1 tbsp golden syrup
- 125g butter
- 1 egg, beaten
|
- Mix the dates and dry ingredients
together in a bowl.
- Add melted butter, egg and golden
syrup.
- Mix well.
- Bake in a lined 20cm tin for
approximately 20 minutes at 180ºC.
- When cold, ice with chocolate icing
before cutting into slices.
Makes about 20

Fruit & Nut Balls

Ingredients:

Method:

- 1/2 cup Nu-Vit pitted prunes, diced
- 1/2 cup Nu-Vit Dates,
dried & diced
- 1/2 cup Nu-Vit apricots, dried & diced
- 1 tbsp honey
- 1/2 cup Nu-Vit walnuts, finely chopped
- 1/2 cup Nu-Vit almond meal
|
- Mix all ingredients together.
- Roll into small balls.
- Refrigerate until set.
- Serve on a platter with apricot
balls, dried fruits and nuts.
Makes about 24

Sweet Apple Spread

Ingredients:

- 1 apple, peeled and cored
- 6 fresh Nu-Vit Dates,
chopped
- 1/2 cup apple juice
|
- Place all ingredients into a food
processor and thoroughly blend until smooth.
Sweet Apple Spread tastes great on
waffles and fuit loaf.

Stuffed Dates

Ingredients:

Method:
|
- 12 fresh Nu-Vit Dates,
pitted
Filling
- 125g ricotta cheese
- 2 tbsp chopped dried apricots
- 2 tbsp packaged ground almonds
- 1 tbsp castor sugar
- 1/2 tsp vanilla essence
- 1/2 tsp grated orange rind
|
- Combine all ingredients for filling
and mix well.
- Fill dates with mixture and
refrigerate.
- Slice dates before serving
