Hamburger Patties

 

Ingredients:

Method:

  • 1 1/2 cups Nu-Vit Gluten Flour
  • 1 cup cottage cheese
  • 3/4 cup whole meal breadcrumbs
  • 1 large onion, chopped
  • 2 eggs, lightly beaten
  • 1/2 tsp sage
  • Mix all ingredients and form into patties.
  • Add more egg if the mixture is too stiff.
  • Brown slowly in a pan or grill on the BBQ.
  • Serve with salad, garlic bread or as a hamburger.

Baked Fish Fingers

Ingredients:

Method:

  • 500g fish fillets, boneless
  • 3/4 cup Nu-Vit Gluten Flour
  • 3/4 cup milk
  • 1 1/2 cups crushed nuts
  • Lemon pepper to taste

 

  • Cut the fish into finger shapes.
  • Roll each fish finger into the flour and then dip into milk.
  • Repeat step 2.
  • Roll each coated fish finger in the crushed nuts until fully coated.
  • Sprinkle with lemon pepper.
  • Refrigerate for 20 minutes.
  • Bake in a moderate oven for 30 minutes.
  • Serve with a green salad or oven chips.

Crispy Sesame Chicken

Ingredients:

Method:

  • 6 chicken fillets
  • 1/2 cup Nu-Vit Gluten Flour
  • 3/4 cup milk
  • 1 cup Nu-Vit sesame seeds, toasted
  • 1 tbsp parsley, chopped
  • Remove excess fat from chicken.
  • Roll chicken in flour then dip in milk.
  • Repeat step 2.
  • Roll in seeds and parsley until covered.
  • Place chicken on a non-stick tray.
  •  Bake uncovered in a moderate oven until
  • cooked.
  • Serve hot or cold.

Fruity Almond Biscuits

Ingredients:

Method:

  • 1 cup millet meal
  • 1 cup Nu-Vit Gluten Flour
  • 1 cup Nu-Vit almonds, lightly roasted
  • 3 tbsp mixed citrus peel
  • 1/2 cup orange juice
  • 1 cup apple sauce
  • Grind almonds fine.
  • Mix together all dry ingredients.
  • Add fruit and juice and mix well.
  • Roll out to 1/4 inch thickness on a floured
  • board.
  • Cut dough into fancy shapes.
  • Place cut biscuits onto a lined baking tray.
  • Bake in a moderate oven for approx. 10
  • minutes.

Pineapple Coconut Slice

Ingredients:

Method:

  • 3/4 cup chopped dates
  • 1/3 cup Nu-Vit Gluten Flour
  • 440g can unsweetened pineapple pieces
  • 1 cup white self-raising flour
  • 1/4 cup brown sugar
  • 60g butter, melted
  • 2 eggs, lightly beaten
  • 1/2 cup Nu-Vit coconut
  • 1 cup rolled oats
  • Grease 25x30 cm pan. Place a baking sheet on the bottom of the pan long enough to extend over the ends.
  • Mix undrained pineapple pieces and dates in a saucepan bringing to the boil, simmer for 5
  • minutes.
  • Remove from the heat and drain excess liquid into a bowl reserving 1/2 cup.
  • Mix sifted flours, pineapple and date mixture, sugar, oats and coconut.
  • Add butter, eggs and reserved juice, mix well.
  • Pour into prepared pan and bake for 20 minutes
  • in a moderate oven. Allow to cool in pan.

Golden Corn Waffles

Ingredients:

Method:

  • 3/4 cup Nu-Vit Gluten Flour
  • 1 tsp ground cumin
  • 1/4 cup white self-raising flour
  • 2 eggs, separated
  • 60g butter, melted
  • 3/4 cup white plain flour
  • 1 tbsp castor sugar
  • 1 3/4 cups milk
  • 2 tbsp water
  • 310g can creamed corn
  • In a large bowl sift flours, sugar and cumin.
  • Mix together egg yolks and milk.
  • Make a well in the flour and gradually stir in
  • the egg and milk mixture. Then add butter,
  • corn and water.
  • Beat egg whites and softly fold into mixture.
  • Place about 2 tbsp of mixture onto waffle iron.
  • Close and cook for 2 minutes or until golden brown.
